Mark Stubbs, chef at the legendary Wheelers Oyster Bar in Whitstable, runs a one day seafood cookery school in the restaurant’s kitchen every Wednesday.

Mark has been at the helm of Wheelers Oyster Bar for over 12 years and prior to this, worked in London under some great chefs. He has appeared on television shows such as The Hairy Bikers and Britain’s Best Dish: The Chefs and has been teaching students at Thanet College for over 10 years.


Learn How to Prepare Seafood
On Wednesdays, when the restaurant is closed, you can spend the day with Mark perfecting your seafood skills. Highlights of the course include how to detect fish at their optimum prime, how to prepare and fillet flat and round fish and how to prepare and cook live crab, lobsters and scallops. You’ll also learn the secrets to making a good fish stock, Court Bouillon, fish cream sauce and Hollandaise sauce. Best of all, everyone sits down to a three course meal with wine and goes home with all the fish you’ve prepared together with stocks, sauces and a dossier of recipes.

- Whitstable is easily accessible by train from London. Trains leave from St Pancras International Station and take just over an hour
